日本アルプスの雪解けが、悠久の時を経て磨かれた、やわらかで清冽な仕込み水。

その繊細な水質に寄り添い、時と忍耐を重ねることで、麹と酵母は静かに育まれ、米の本質を奥深く引き出します。丹念な低温発酵から生まれるのは、澄みきった美しさと、豊かな余韻を併せ持つ一献。

Extracting the purest water in Japan from the snow-alps areas, as it’s filtered through a naturally formed riverbed, the softest brewing water creates a challenge to brew sake.

Turning the downside into an upside, we borrow the power of time and the virtue of patience to brew our sake. Overtime, the modest mineral levels gently feed the self-cultivated yeast to form a miracle growing process in a below-zero temperature environment, which in turn generates a healthy medium for a perfect fermentation of the koji mash to drive out the essentials of the rice at a deeper and richer level. Through a long, labor-intensive, slow, and attentive fermentation process, the finest and delighting sake is yielded.

絹のように滑らかで、爽やか、淡麗な味わい、半辛口。誘うようなロマンチックなライラックの花の香りがほのかに広がる。淡いボディは、「初夢 」の名にふさわしいシルキーでうま味のあるライトボディの滑らかさの最初のノートにすんなりと入り、ブルーベリーとスターフルーツの余韻が続く。

セミドライな後味で、空気感のある喉越し。

Inviting, romantic, lilac flowers open subtly on the nose. The light body allows an easy entry on the first note of a silky, umami, light-bodied smoothness calls to its name “first dream”, then a lingering of blueberry and starfruit.

Semi-dry tail with a quick airy note as the finish.
